We are having a fund raiser for my dd's school, (wine and cheese around the world) and I (w/ another mother) am in charge of Spain. Any ideas will be helpful, thanks.

I lived in Spain as a teenager

and a very easy to make and super well known (common) dish would be the Tortilla espanola.

Basically it's similar to an omlette, mostly eggs, potato, and onions. It has a mild taste but is very good. The egg is what keeps it all together and it takes the shape of a large pan and comes out like a pie, which you can then slice up.

Spain is hugely famous for Tapas.

"Start off with a little history, letting your guests know that the word tapas means cover or lid in Spanish. One theory is that the current use of the word derived from the custom of putting a slice of bread or cheese or ham over the top of the wine glass, possibly to keep out insects. These edible lids evolved into the vast array of appetizer-sized foods offered in tapas bars or tascas."
