  • What's your favorite fish?

    I bought and cooked Alaskan Halibut for the first time today and it was really good!!! I'm trying to expand the types of fish we eat which is usually catfish (only kind DH will eat) and salmon. I also tried Steelhead trout that was good, but not as good as the Halibut.

    So, what type of fish is your favorite(s), how do you fix it and do you put any type of sauce over the top? I'd love to find some good sauces (healthy if possible)! Thanks!!!

    Tilapia, Salmon & Tuna steak....

    The tilapia I usually cook in the oven.

    I spray a pan with I can't believe its not butter spray, lay the fish on it, sprinkle it with lemon juice (or lay a slice of lemon on each piece) & some dill & bake. You can also spray a sheet of foil with spray, use the lemon & dill, wrap it up & put it on the grill...Yum I als sometimes use lemon pepper seasoning in place of the dill.

    The salmon I usually poach & if I am in the mood I sometimes make a dressing from sour cream, finely diced onion & cucumber. I serve the poached salmon hot, with the cold dressing.

    The tuna I usually marinate in some italian dressing & grill whole, or make into tuna kabobs. My DH loves Kabobs

    Now I am getting hungry!

        Salmon, Flounder, Scrod, Haddock, Catfish....(kids ment.)

        We just had fish tonight. We have it every week. I usually do fish on the grill wrapped in tin foil with some marinade (easy clean up). Or I add dressing, lemon, olive oil, lemon pepper. Sometimes I use black olives and diced tomatoes. I generally buy whatever fish is on sale. Lately the kids love when I add garlic shrimp too. Yummy! Flaky fish like flounder I use egg and breadcrumbs in the frying pan.

          We love red snapper, sole, cod, halibut and salmon

          I try to buy only wild caught fresh if possible since they have the most nutrition. Salmon is great grilled or baked. Same with the red snapper. Sole and cod I often lightly bread and bake. I luckily have a DS who loves fish and most seafood, even kippers and sardines!

            j/k, I almost never make fish at home... just shrimp or crabcakes. I don't know why, I should try better, huh? At least this thread will give me some ideas!

              Our favorites are mahi mahi, swordfish, tuna steak....

              These fish are fairly meaty. We also like trout, salmon and halibut. We generally throw some spices and veggies in some foil with fish and grill away.

                Thanks for posting this. I'm trying to expand the types of fish we eat also.

                Our Tom Thumb grocery store recently remodeled and became a "signature" store. They have these marinades in their seafood department that are free. When they package the fish, they will add the marinade of your choice. I just did it for the first time this weekend and it was great. The only bad thing was their choice of fish - they only had catfish, cod and trout (with the skin still on). I chose the cod and had them marinate it with lemon garlic seasoning. I cooked it on my indoor grill, but it would have been better cooked in the oven I think. My indoor grill is a sad excuse for a grill.

                  The key to fish

                  is keep it simple and don't overcook. I prefer white tender fish like sole, cod, tilapia. We also make lots of salmon. I make sea scallops and clams quite a bit too.

                  For grilling (or broiling), spray with olive oil, then salt and pepper. In the summer I make lots of fruit salsas to put on the fish (just google and you will get tons of recipes). I've made mango, grape, peach, but really, any fruit will work. In the winter, I often make a chopped plum tomato/basil/garlic/parmesean topping that is out of this world. I also make a brown sugar and chili powder rub that is easy and delicious. Rub on fish, grill and that's it.

                  To cook on the stove, spray your pan with a little butter spray, sprinkle a bit of flour and maybe lemon rind on your fish, and even add a bit of white wine. Again, the key is to cook it quickly, only about 1-2 minutes per side for thin fillets. For scallops, I slice them very thin and cook on high heat in a butter sprayed pan until slightly browned. I serve these with mashed sweet potatoes and sprinkle green onion over everything - yum.

                    I like Salmon and Tilapia...

                    They both taste great when I wrap them in tinfoil with limes, butter, dill, salt and pepper and grill them!!!

                      I will definitely have to try it. My kids are still talking about how good the halibut was last night. Too bad it was so expensive. ($20 a lb!) Cheaper than going out to eat though.

                        Yes!! Why is fish so expensive? Post where u buy it & how much

                        I bought some tilapia and paid about $8/lb. Sometimes it's just too much money. If you have a great place to buy fish, will you post how much and where?

                            and the freshest I've ever found it is either Whole Foods or HEB Central Market. Almost all of the wild fish is at least $18-25 a lb. Catfish was the cheapest at $6 a lb yesterday. I think farm raised salmon and the trout was about $12'ish a lb. It is very expensive, but like I said, it is cheaper than going out to eat with a family of 4 and healthier too. I wish we could afford really good fish several times a week, but for now I try to buy it 1x a week and we've cut out eating 1 meal out.

                              I love fish - swordfish, tilapia, flounder and red snapper

                              and of course ... lobster! LOL

                              Tilapia is best baked. I usually just grill swordfish and eat it plain. Flounder and snapper are good for pan frying.
