I've got loads of black bananas to use up and I don't want to freeze them ... and I need a dessert for dinner for friday night. Anyone have a good banana dessert recipe which calls for mashed banana??
1 stick softened butter
1.5 C sugar
2 eggs
1 tsp vanilla
2 C flour
1 tsp baking powder
Dash of salt
½ tsp baking soda
3 med/large mashed bananas (I whip thru food processor)
½ C milk
Cream butter and sugar together. Add eggs, vanilla, milk, mix well. Then add all dry ingredients. Spray cake roll pan w/ oil the pour batter in and spread evenly. Bake at 350 deg for about 20-25 mins, til lightly browned.
Mix cream cheese and butter til smooth. Add powdered sugar and vanilla. Use milk to make smoother consistency if needed. Spread on warm banana bars, allow to cool, then cut.
2 Cups Flour
¾ tsp. baking soda
1 cup sugar
¼ cup butter, softened
3 bananas (I think I used 4 or 5)
1 egg
1/3 cup vanilla fat-free yogurt
1 – 1 ½ cups coconut flakes
1 ½ - 1 ¾ cup Hershey’s milk chocolate chips
1. Heat oven to 350.
2. Place sugar & butter in a bowl and beat with mixer. Add bananas and mix. Add egg and yogurt. Mix.
3. Add flour and baking soda. Mix.
4. Take ¾ cups of the chocolate chips and place in microwave safe bowl. Microwave on high for 30 seconds. Mix chocolate and microwave again for another 30 seconds. Mix the chocolate so that it fully is melted. Add about 1 cup batter to chocolate and stir until well combined.
5. Add coconut and rest of milk chocolate chips to vanilla batter. Place vanilla batter into 9X5 loaf pan. Put chocolate mixture on top and swirl it in with a spatula.
Bake at 350 for about 45 min to an hour until a toothpick inserted in center comes out clean. Cool for 10 minutes (who are we kidding – just eat it!).

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
Cream Cheese or Brown Butter Frosting (recipes follows)
Preheat the oven to 350°F. Grease and flour 13 x 9 inch pan or 2 9" rounds.
Cream the shortening, then slowly add the sugar, and beat until the mixture is smooth. Beat in the eggs, then the mashed banana and buttermilk, and mix well. Stir together the flour, baking soda, baking powder, and salt, add to the banana mixture, and beat until smooth.
Spread evenly in the prepared cake pan and bake for 30 to 35 minutes, or until a toothpick inserted in the center of cake comes out clean. Let cool in the pan. Frost when cool.
I am torn between the two frostings, tending more toward the brown butter than cream cheese, but try them and decide for yourself. You can also add 1/4 of a mashed banana to either frosting to make the cake more "banana-y" but if you do, be sure to proceed cautiously with the milk/cream so the mixture is not too thin. If it is, add more powdered sugar.
Cream Cheese Frosting
4 oz. Cream Cheese, softened
4 Tablespoons Butter (1/2 stick)
2 cups confectioner's sugar (sifted, if lumpy)
1 teaspoon vanilla extract
Dollop of cream or milk if mixture too thick
Beat all ingredients until thick and spreadable.
Brown Butter Frosting
1/4 cup Butter (no substitute)
2 cups confectioners sugar
1 teaspoon vanilla extract
3 tablespoons milk
In medium sauce pan, heat butter over medium heat until delicate brown; remove from heat. Beat in the confectioners sugar, vanilla and milk until smooth and of spreading consistency. Adjust with milk if necessary

I made Kerlin's recipe with the brown butter icing and it was DELISH! A real winner...my only comment is that I needed loads more sugar to make it spreadable consistency. Still AMAZING yummy and a real crowd pleaser.
