  • Need a banana dessert recipe...anyone??

    I've got loads of black bananas to use up and I don't want to freeze them ... and I need a dessert for dinner for friday night. Anyone have a good banana dessert recipe which calls for mashed banana??

        I am torn between the two frostings, tending more toward the brown butter than cream cheese, but try them and decide for yourself. You can also add 1/4 of a mashed banana to either frosting to make the cake more "banana-y" but if you do, be sure to proceed cautiously with the milk/cream so the mixture is not too thin. If it is, add more powdered sugar.

        Cream Cheese Frosting
        4 oz. Cream Cheese, softened
        4 Tablespoons Butter (1/2 stick)
        2 cups confectioner's sugar (sifted, if lumpy)
        1 teaspoon vanilla extract
        Dollop of cream or milk if mixture too thick
        Beat all ingredients until thick and spreadable.

        Brown Butter Frosting
        1/4 cup Butter (no substitute)
        2 cups confectioners sugar
        1 teaspoon vanilla extract
        3 tablespoons milk

        In medium sauce pan, heat butter over medium heat until delicate brown; remove from heat. Beat in the confectioners sugar, vanilla and milk until smooth and of spreading consistency. Adjust with milk if necessary

          When I make this (rarely) I just ad lib for any ingredients I lack. The essentials are bananas, brown sugar, butter and rum.

            Thank you for posting this before. DD made it this summer as part of her 4-H Quick Breads project. It is FANTASTIC.

            Incidentally, DD didn't read the ingredients very well and used dark chocolate - still excellent.

                I made Kerlin's recipe with the brown butter icing and it was DELISH! A real winner...my only comment is that I needed loads more sugar to make it spreadable consistency. Still AMAZING yummy and a real crowd pleaser.
