  • Healthy recipes?

    Anyone have any healthy appetizer or dessert recipes that also taste really good? Next Thursday is bring a healthy appetizer or dessert to work day. I'd appreciate some ideas.

    Pineapple angelfood cake

    just mix a can of crushed pineapple with the dry angelfood cake mix in the box and bake. Boy it is good!

    Everyone where i work is on WW so this is a staple there!

      Have to put in my plug for butternut squash

      I do an easy appetizer -- it takes a while to type out, but is easy and "active" time is not much.

      Halve a butternut squash lengthwise, scoop out seeds and roast at 375 cut side down on a cookie sheet lined with heavy duty foil and sprayed with olive oil (you don't need the foil, but it helps with cleanup). I'd say give it 45 minutes or so, it is done when a knife goes through it easily. Let cool -- if it cools enough, it practically lifts out of the shell.

      In the meantiime, chop a sweet onion and cook in a pan sprayed with olive oil (or use a teaspoon of olive oil and butter) -- start at medium high heat then reduce to medium low and cook slowly, stirring every now and then until they are kind of carmelized, golden brown. If you want, toss in some chopped up fresh sage.

      Scoop the butternut squash from the shell into food processor and puree. Add onions and some (3/4 cup?) shredded gruyere cheese (I buy it like that in the cheese section of my grocery store). Pulse until the puree, onions and cheese are really well blended.

      You can refridgerate this for up to a few days.

      For work you can heat it in a microwave and use a small melon scoop to fill store bought filo shells.

      At home, I put a sprinkle of gruyere in the bottom of the shells, heat for about 5 minutes until the cheese melts, then fill and heat through in the oven.

        I had this at a friends - I jar of roasted red peppers drained, 2 cloves of garlic, and a container of feta cheese. Blend in a food processer. Serve with veggies and/or wheat crackers.

          Everytime you talk about butternut squash - you know you love squash right? I always think of my niece who as a baby had an orange tint to her because she loved squash. Everytime you post, I think, hmm i wonder if her skin has a special hue. Nevermind me, I always think strange thoughts LOL....

            My kids have orange noses, both of them, from all the carrots and squash they ate as babies So far I do not believe I'm an oopma loompa but... I only have myself to judge!

            Funny thing is... I just had homemade butternut squash for lunch.

            Yes, I do love it and it is a great diet food -- I need my smooth creamy filling comfort foods, and this is all that and fiber too!
