I want to get more veggies into my girls and they love popsicles. I read a recipe somewhere with V8 (I guess splash) or carrot juice somewhere, but can't remember where. Anyone ever make them? Thanks

I don't think I used the Splash, since I think that is the one w/ Splenda. I think I used the Fusion. Anyway, whichever one I used, I just poured into a popsicle mold. I didn't do anything else to it.
I sometimes use the low-sodium V8 juice as a stew base. It is quite tasty.
V8-popsicles sounds like the most unappealing thing I've ever imagined! Will you mix it with something? I just can't even imagine. I guess that splash is a more sweeter version, but all I read was v-8 and thought.....ewwwwww....
But I'm very interested in how they work out for you.....My ds isnt a big veggie eater either....
(not really related to your popsicle post) BUT:
I use the Splash for my mixed drinks (lower calories) mix w/ Coconut flavored rum
I use the V8 regular drink, as a base for veggie soup, chili and sometimes to thin out spaghetti sauce if it's too thick. LOVE IT!!!!
Another thought is to make up smoothies (yogurt, fruits and veggies) and use them for popsicles. They still taste sweet, even with the veggies. They freeze up great (basically is frozen yogurt).
I gotta agree with Kelli....a V-8 popsicle does sound gross LOL!! DD wil eat the mixed popsicles with no problem (the smoothie ones).
