  • Recipe question

    I am coordinating a Hawaiian-themed hot lunch for my DS's first grade class next Monday. We've been given virtually no direction on the menu, but I found a recipe for Hawaiian Chicken Kabobs that looks good. The recipe calls for 8 skinless, boneless chicken breast halves, and that is for 8 servings. I know that each 1st grader, however, will not eat a whole chicken breast half (will they?), but I'm not sure exactly how much to make. There are 18 children and 2 teachers. Would 12 chicken breast halves be enough? There will be other dishes (rice, fruit)?

    Also, if you have any other suggestions for Hawaiian recipes, let me have them!

    That is a LOT of food ...

    Most adults will eat a chicken breast half for a main course, for a lunch with other stuff, and considering that I'm sure some kids won't eat anything that isn't mac n cheese or chicken nuggets, I'd say you would be fine with the 8 servings in the original recipe.

    Other suggestions - pineapple, mango, and papaya fruit salad; maybe some star fruit. Also, buy some leis and some little paper umbrellas to make it festive.

      I'd do something with coconut too. No ideas on recipes though.

        I saw a couple of recipes for coconut rice (which is basically just tossing in some toasted coconut with steamed rice). I thought that might go well with the chicken, but I'm a bit worried that some kids won't like coconut. Maybe I could include it on the side?

          Crockpot Hawaiian chicken is super easy and yummy (m)

          plus, you can and should use thighs.

          Put in 3-4 lbs of skinless thighs, one cup of teriyaki sauce and one 20 oz. can of crushed or chunked pineapple with the juice, and let it cook on low for about 8 hours.

          The meat just literally falls off the bone, then serve it with rice. You can also go the mixed plate route and add a scoop of macaroni salad and you're pure Hawaiian!

            I have a recipe for crockpot kalua pig that can't be beat--plus it is SO FREAKIN EASY it will make you feel like you are cheating ;-)
