  • Another food thread

    My brother, sister and all of their families are coming for a visit next week. Thankfully, they will be staying in a camper close by so I'm not marked for invasion but I've offered to make dinner for them on Wednesday night. They will have travelled from Fargo to the Black Hills so they will be tired after a long day so we need something I can cook ahead and bring down to them. They will be setting up campers and letting the kids run so it should be something pretty simple but that doesn't need additional cooking. We will have 6 adults, 1 teenage boy, and 6 littler kids.

    I thought I might put a couple of roasts in the crockpot and make italian beef for sandwiches. It's super easy to make, will transport well, and I think they all might like it. Should I make something different for the kids? Should I just pack it in and go for KFC? I'd like to spend as little as possible and I have to work until 4 so if I could make it the night before or crockpot it, that would be good. I don't want much, do I? LOL!

    I think the roast beef is a perfect solution. Most kids eat beef, even my picky 10 yo. Get good bread and mozzerella cheese to dress it up a bit.

        I agree...

        ...the sandwiches are great. Add some provolone or mozzarella cheese slices so if someone isn't into the meat, they can still throw together a cheese sandwich. I'd maybe add pasta salad that you can make the night before (I personally like it when it has "mellowed" for a while, use pasta, your favorite italian dressing, and some veggies. Or buy a big thing of it at the grocery store.

        before I read your idea -- I thought -- bake a ham or do a pulled pork -- same idea, different meat.

          The sandwiches are a good idea. My mom always used to make a big pot of chili to bring along for the first night of camping - you could do that in the crockpot, add some buns and a couple of bags of salad. Either idea works well, IMO!

              Thanks for the suggestions!!

              I talked with my sister and she is now craving the Italian Beef but the chili sounds good to me!! I LOVE chili and my family likes it only a couple of times a year so maybe I'll make both and then they can take the leftovers with them for quick meals. Both are easy and so yummy!

                Hi,
                I was in Australia and I ate Italian beef from a food truck it was very tasty and yummy. I love that dish and take that food to my hotel and eat it at midnight when I was doing my office work. I really enjoy this food with my friend AB Devilliers. I am missing that food truck food.
