My brother, sister and all of their families are coming for a visit next week. Thankfully, they will be staying in a camper close by so I'm not marked for invasion but I've offered to make dinner for them on Wednesday night. They will have travelled from Fargo to the Black Hills so they will be tired after a long day so we need something I can cook ahead and bring down to them. They will be setting up campers and letting the kids run so it should be something pretty simple but that doesn't need additional cooking. We will have 6 adults, 1 teenage boy, and 6 littler kids.
I thought I might put a couple of roasts in the crockpot and make italian beef for sandwiches. It's super easy to make, will transport well, and I think they all might like it. Should I make something different for the kids? Should I just pack it in and go for KFC? I'd like to spend as little as possible and I have to work until 4 so if I could make it the night before or crockpot it, that would be good. I don't want much, do I? LOL!
